Sunday Champagne Brunch at VUE

Hyatt on the Bund’s Sunday Champagne Brunch at VUE Restaurant features 73 comfortable seats and direct river views of the Bund and Pudong.  VUE Restaurant is a classic European restaurant offering an elegant, home-style dining experience created through the use of wood décor, book-lined shelves and sofas, all alongside eclectic collections of model cars, pipes and vintage corkscrews.


During brunch, seven cooking stations are setup throughout the restaurant, presenting diners with cold selections and cheeses, fresh seafood, meats and desserts.  Only appetizers and desserts are served buffet style, while chefs offer tableside service for cold cuts, such as freshly shaved Joselito ham; and an array of seafood, including fresh-shucked oysters and Boston lobster.  Every guest is presented a VUE caviar egg as a welcome – an egg benedict served on muffin with caviar on the top.


All the soups and main courses on the à la carte menu, including lobster bisque and champagne risotto with black truffles, are cooked tableside.  As one of the restaurant’s signature dishes, our lobster bisque is a rare indulgence for diners.  Most of the flavor of the bisque comes from shells of Boston lobster, which are simmered to create a rich stock.  Warm cream is then added, creating a luscious soup full of intense lobster flavor.  Champagne risotto with black truffle is an elegant and tasty Sunday dish, enhanced by the aromas of champagne and truffle to give it a romantic touch. 


Signature “aux sarment” is newly added to the brunch menu – the rib-eye beef is simply grilled on dry vine shoots and served with freshly chopped shallots and sea salt. This century-old special cooking style from the south-west of France countryside imparts a smoky flavor to meat.


To complete the brunch, our tantalizing assortment of desserts and seasonal fruits are sure to satisfy and delight any sweet tooth.
